Research Staff, Healthy Irish Cheese
Michelle O’Rourke (BSc) is a research master’s student on Food for Health Ireland’s Healthy Irish Cheese research pillar. Her work focuses on digestibility of processed cheese matrices. She is a recent graduate from Food Science in UCD and her final year project concerned rennet clotting times of milk from cows in late lactation. This project built on previous knowledge gained through her work experience in Lakeland Dairies as a quality technician. Her research interests include diversification of the cheese industry in Ireland and use of cheese as a functional food.
