Career Profile

Amanda Forde was awarded with a Bachelors Degree in Microbiology from University College Cork in 1993. She worked at Chr. Hansen's Laboratory (UK branch) before returning to UCC to complete a PhD in the microbiology of cheese starter cultures. Amanda was employed by the National Food Biotechnology Centre, UCC and sub-contracted to Carbery Group in 1999. Her previous roles also included an EU-funded research position at the Microbiology Department, UCC and Oral Health Research Centre at Cork's University Hospital. She joined the Probiotics Laboratory in the Biosciences Institute, UCC, in 2002 and in 2004, undertook the position of research disseminator with Relay, the national dissemination service for Irish food research. In November 2008, Amanda was appointed as centre manager for Food for Health Ireland, where she is responsible for coordinating the day-to-day research and administrative activities.

Research Interests

Research interests include several aspects of food science including functional foods; microbiological and biotechnological aspects of lactic acid bacteria and bifidobacteria; bacteriophage and plasmid biology, milk fermentations (including factors controlling texture, flavour and other end-product characteristics) exopolysaccharide production and food safety.
